Ishpingo is an evergreen tree of the Lauraceae family, native to Ecuador and Colombia. It is one of the South American trees with a cinnamon-like scent and is used as a spice. The name comes from Southern Quechua (ispinku) or the language of the Kichwa tribe (ishpinku). In Ecuadorian but also Colombian cuisine, this spice is commonly used, according to archaeological research since pre-Inca times, as a seasoning. In contemporary Ecuadorian cuisine, it has an irreplaceable place in the common cooking and production of food such as mazamorra morada (purple pudding) and drinks such as the alcoholic drink alajua or the very popular drink La Colada Morada. This drink, which symbolizes the Day of the Dead in Ecuador, on November 2 each year, excels in a balanced combination of flavors, of which the taste and aroma of ishping play an irreplaceable role.
